When I first thought of Hells Kitchen, I came to Rehan. I knew the two of us, sustainable ingredients and the city of Chicago could make the juiciest, most delicious burgers this town has ever seen. Ashutosh came to one day. We were eating cheesesteaks from a food truck. He said, "You know what, Rehan? The two of us – we could do this. We could create a restaurant with a garden in the back. We could make food with all fresh vegetables. And we could get to know local farmers. We could make the best burgers Chicago has ever seen." So we did.
